- 3 king oyster mushrooms
- half a cucumber
- 100 g goat cheese
- 2 tablespoons of honey
- 2 to 3 tablespoons of soy sauce
- 1 avocado
- juice of 1 lemon
- 2 oranges
Pour the honey and soy sauce into a frying pan and bring to the boil, stirring constantly. Halve the mushrooms through the middle and cut into slices 1 cm thick. Add to the pan and sauté, turning constantly. Season with salt but don’t add any extra liquid. When ready, remove from the pan and set to one side.
Peel the avocado, mash the flesh with a fork and sprinkle with the lemon juice.
To assemble, slice the cucumbers into semicircles, top with a piece of goat cheese followed by a slice of mushroom, then finish with a small spoonful of avocado cream. Secure each one with a toothpick and arrange on slices of orange to serve.
