Roasted mushrooms with quinoa

Ingredients:

  • 250 g mixed mushrooms (oyster, yellow oyster, pioppino)
  • 200 g cooked quinoa
  • 1 carrot
  • half an onion
  • 1 spring onion
  • parsley
  • oil, salt and pepper

Preparation:
Fry the onion and spring onion in a little oil, then add the sliced carrots and chopped mushrooms. Season with salt, pepper and crushed garlic.

Stir in the boiled quinoa, then sprinkle with chopped parsley. An excellent one-pot meal.
