Ribs with fried mushroom ragout
- 500 g button mushroom
- 1500 g rib
- a half aubergine
- 1 zucchini
- 3-4 sun-dried tomatoes in oil
- grape seed oil
- salt and pepper
Season the ribs with salt and pepper and cook in a pre-heated oven at 200°C for about an hour until crisp.
Dice the vegetables, season the mushrooms with salt and pepper and fry until soft in a hot frying pan.
Add the finely chopped sun-dried tomatoes and chives, drizzle with grape seed oil and serve immediately.
