Raw mushroom salad with avocado
- 500 g chestnut mushroom
- 1 bunch spring onions
- 5-6 tomatoes
- 2-4 avocados
- 1 bunch coriander
- 2 lemons
Peel the tomatoes and dice. The salad will be more attractive if some of the seeds are removed.
Peel and chop the avocados and sprinkle with lemon juice to stop the flesh going brown, then mix with the tomatoes.
Cut the spring onions into 1 cm lengths and dice the raw mushrooms.
Add to the salad and carefully mix in the finely chopped coriander.
Season with salt to taste and serve on a bed of green salad.
