Mushroom, plum and pumpkin medley
- 500 g button mushroom
- half a butternut squash (neck end)
- 250 g plums
- honey or date syrup
- oil, salt and pepper
Peel the neck of the squash and slice into circles 1.5 cm thick. Arrange the circles on a sheet of baking paper and brush with honey. Bake at 180°C for about 30 minutes, until starting to soften.
Halve the plums, brush with honey and place on a grill pan. Arrange the pumpkin circles next to them, along with the sliced mushrooms seasoned with salt and pepper. Cook on both sides, turning constantly.
Each with its own distinctive flavour, these three ingredients make an exciting combination. A perfect warming feast for a cool autumn evening.
