Kohlrabi and oyster mushroom stew
For the stew:
- 500 g sliced oyster mushrooms
- 1 onion
- bell pepper
- red pepper power
- oil, salt and pepper
For kohlrabi stew:
- -6 kohlrabis
- 1 bunch of parsley
- 2 tablespoons butter
- 2-3 tablespoons flour
Steam the kohlrabi cubes in a little water, then mix with butter and flour. Cook and season with chopped fresh parsley at the end.
For the oyster mushroom stew, dice the chopped onion and add the sliced oyster mushrooms, the diced tomatoes and peppers. Allow the mushrooms to roast a little, then remove from the owen, sprinkle with red pepper powder, whisk and simmer until done.
Serve the kohlrabi with the stew on the top. Excellent meatless lunch!
