Mushroom fitness salad

Healthy mushroom salad

Ingredients:

  • white button mushrooms
  • white beans
  • purple onion
  • bitter salad leaves (endives, chicory), or cabbage, or fennel
  • cucumber
  • red pepper
  • lemon
  • broccoli sprouts
  • olive oil, salt and pepper
  • feta cheese (optional)

Preparation:
Cut the vegetables into julienne strips. Stir in the drained white beans and sliced mushrooms, then sprinkle the broccoli sprouts on top. Make a dressing from the olive oil and lemon juice, season, then drizzle over the salad. Serve immediately. Packed with protein and vitamins, this is the perfect salad for spring.
