Couscous with fried oyster mushrooms


  • 500 g oyster mushrooms
  • 250 g couscous
  • 3–4 tablespoons of seasoned tomato sauce
  • 1 onion
  • goat cheese
  • oil, salt and pepper

Sauté the chopped onion, add the couscous and tomato sauce, mix well, then add double the volume of boiling water. Stir two or three times, then cover and simmer. Leave to stand with the lid on.

Cut the mushrooms into strips, season with salt and pepper, then fry until golden.

Serve the couscous topped with the fried mushrooms and crumbled goat cheese.
