Avocado shells filled with raw mushroom salad

Ingredients:

  • 300 g raw button mushrooms finely diced
  • 2-3 mature avocados
  • 150 g surimi fish sticks
  • 1 carrot, grated
  • 2 handfuls of cherry tomatoes
  • juice of 2 limes
  • fresh herbs, olive oil
  • salt and pepper

Preparation:
Halve the avocados and remove the stones. Carefully cut the flesh into small cubes. The avocado shells will be needed later for filling: place them carefully in a large bowl and drizzle with lime juice to help preserve their green colour (unfortunately this method is not always successful).

Mix together carefully the mushroom cubes, grated raw carrot, fresh herbs, chopped surimi fish sticks and halved cherry tomatoes and use to fill the avocado shells.

Eat as soon as possible.
